Nutty Quinoa & Chia Protein Bars

I’ve been feeling inspired to try out some healthier recipes, in particular protein rich snack foods. Here is a recipe I came up with for some Nutty Quinoa & Chia Protein Bars.     Ingredients

  • 1/2 cup quinoa
  • 1/2 cup chia seeds
  • 3/4 cup oats
  • 1/2 cup roughly chopped almonds
  • 1/4 cup desicated coconut
  • 1/4 cup sunflower seeds
  • 1/4 cup pepitas
  • 1/4 cup linseed
  • 1/4 cup dried cranberries
  • 1/4 cup dried incaberries
  • 1 1/2 scoops vanilla protein powder
  • 1/3 cup crunchy peanut butter
  • 1/3 cup tahini
  • 1/4 cup maple syrup
  • 1/4 cup agave nectar
  • 2 tbs coconut oil
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 1/4 tsp salt
  • 1 tsp vanilla


Mix dry ingredients and toast in a moderate oven until just golden.   Add to bowl with dried fruit and protein powder. 
Mix peanut butter, tahini, maple syrup, agave nectar and coconut oil over heat until simmering. Remove from heat and in spices.     
Add to dry ingredients and mix well.

Press into 22cm square line baking dish. Allow to cool and refrigerate for 2 hours.

Slice into pieces and place in an airtight container ready for snack time.

Side note : You could use whatever fruit and nuts you liked: blueberries, goji berries, cherries, pecans, walnuts; or add cacao nibs and cacao powder for a chocolatey version.
